I had a big write up on this one, with a bunch of info.
But then Squarespace went down when I went to publish. So it is all gone.
Basically I tried a new thing. My brewery is hot, and not suitable for aging barrels in the summer. I have these little rigs my buddy Benny Bunks made for his barrel project a while back, little dollies on wheels. I put full barrels on them, and wheeled them in and out of the cool room to mitigate the bullshit temps. Sometimes I’ll come in at 7am and it is 34C inside, which is just as slimey as it sounds. Sometimes I mash in in my undies.
So yeah. Figuring out new ways of dealing with material conditions, as brewers have for thousands of years. I’ll do more shit soon and speak at length about it.
