I’m still fucking around with that serial pitch idea from the last box. That was an IPA (Suburban Cryptid), but this one is a pilsener style beer.
I really like the beer, but I think I messed up the experiment - the idea was to dip hop, so a lot of thiol and terpene precursors were present from the start. For the uninitiated, dip hopping is a technique where you add hot water direct to tank about an hour prior to sending wort in, and then throw some hops on top. This is similar to a dry hop at pitch, except due to the heat it denatures any enzymes in the hops to prevent hop creep, as well as ideally flashing off some myrcene which masks the fruitier notes from the hops.
Unfortunately, I had too much hot water floating on top of the wort when I pitched the yeast. It struggles a bit to begin with, as it is only a half pitch, but I think a significant amount of the yeast died on contact. The first part of the ferment was far more sluggish than the previous trial at this, but when it eventually got enough done the Notty was pitched and took care of the rest.
Maybe I’ll try it again in a few months, or possibly shift up some of the yeasts. The sidequest continues, pointlessly.
